Corporate Chef Matt Baum
Ocean Beauty was awarded the seafood business for Rockfish Seafood Grill’s Dallas and Houston locations in 2004. Since that time, we have worked closely with the team there to provide them with the quality seafood they pride themselves in serving their guests. We have chosen Rockfish Seafood Grill as our customer(s) of the month and interviewed their Corporate Chef, Matt Baum, for the occasion.
Chef Matt developed a passion for cooking at an early age. His mother had majored in Home Economics and he spent a great deal of time in his youth watching her in the kitchen, and from what he says “learning what NOT to do”! His family owns a travel agency and as a young man he traveled the world with his family and experienced many different cuisines and flavors, which inevitably fueled his passion for food and cooking.
He worked in several restaurants before joining the team at Rockfish in 2002. He worked in the McKinney store and soon became a trainer for Rockfish, going to all the new stores and working with their staffs to get them up and running smoothly. He transferred to the Rockfish location in North Carolina and worked there as the GM for 3 years before transferring back to Texas in 2007. In 2008, he was promoted to the position of Corporate Chef.
When asked what he likes most about his job, he said he loves working with the team he has now on creating and developing new recipes and dishes for the restaurants. He works closely with his Director of Procurement, Virginia Pivonka to source new and different items to offer to their guests. One of the biggest challenges he faces is trying to incorporate new and innovative contemporary dishes onto the menu while keeping within the casual dining price point that will remain attractive to their guests. Matt loves working with a variety of spices, flavors and textures. He enjoys introducing new creations that are attractive to his existing customers and also innovative and intriguing enough for his more contemporary guests.

When Chef isn’t working on new recipes or helping to train new managers, he likes to spend his free time watching movies, listening to music and spending quality time with his girlfriend and two dogs.
