Farm Raised Atlantic Salmon

(Salmo salar)

Physical characteristics: Atlantic salmon skin is silver with a dark back. The upper part of the body is covered with dark crosses and spots, but they do not extend to the tail. The flesh of this salmon is pink to red, and is controlled by the feed pigment. Most farms use either astaxanthin (which produces a redder meat and is usually used for frozen production) and canthaxinthin (which produces a light pink to red meat and is used primarily on fresh production). Product weights range from 2 lbs. up to 20/+ lbs., with the average weight around 8 lbs. dressed, head on.

Color may have been added to the feed of any red meat aquacultured finfish that you purchase from Ocean Beauty Seafoods, but has been approved by FDA for human consumption.

Seasonality: Year round.

Major catch areas: Washington, Maine, British Columbia, New Brunswick, Chile, Norway, Scotland, Iceland, Ireland.

Harvest method: Product is delivered live to processing facility, where they are bled before processing.

    Product forms:

  • Fresh: Dressed head-on/gills-in, dressed headless, Skin-on Pin Bone-Out fillets, Skin-on Pin Bone-In fillets, skinless boneless fillets, steaks and tail roasts.
  • Frozen: Dressed head-on and headless, Pin bone-in and Pin bone-out fillets.
  • Value-added: IQF and vacuum-packed steaks in 2 ounce increments from 4-10 ounce, IQF and vacuum-packed fillet portions in 2 ounce increments from 4-10 ounce. Portions can be produced either bone-in or boneless and either skin-on or skinless.

Flavor/texture profile: Meat color can range from light pink to deep red and will lighten when cooked. The meat texture is moist, but firm.

Notes: From a buyers perspective, pen-raised Atlantic salmon offer attractive virtues. They are available year round and have unmatched quality control due to refined methods for moving fish from the pens to boxes. Furthermore, due to the continual increase in world wide production, there is plenty of selection to choose from daily at competitive prices. Long gone are the days restaurants and retail stores take a "hit or miss" chance on running salmon promotions. Nowadays, a salmon farm can literally guarantee product months out from production ensuring steady supplies of any product form at a given time.
