Recipes:
Spring Onion Scramble
Combine Echo Falls Hot Smoked Salmon, Traditional or King,
with fresh chopped garlic, green onions seared in extra
virgin olive oil and a splash of sherry wine. Scramble with three eggs
and fold in cream cheese.
Ingredients:
Oil, olive - 2 tablespoons
Garlic, fresh chopped - 1 teaspoon
Onions, green chopped - 1 bunch or 1 ¼ cup
Echo Falls Hot Smoked Traditional or King Salmon - 4 ounces
Sherry wine - 3 tablespoons
Lemon juice - 1 tablespoon
Salt - ¼ teaspoon
Pepper, black - ¼ teaspoon
Dill weed - 1 teaspoon
Eggs, mixed - 8 each
Cream cheese - 6 ounces
Method:
Heat olive oil in non-stick pan and sear garlic, onions and flaked
salmon until tender and browning with dill, salt and pepper.
Add wine and sherry, cook 30 seconds and scramble in egg.
As eggs firm up add dollops of cream cheese and gently fold in, remove
from heat.
Chef's Note:
Serve with hash browns and fruit.
Yield: 4 portions
