Recipes: Basic Best Salmon Loaf

1 can (14-3/4 oz.) or 2 cans (7-1/2 oz. each) Alaska salmon
2 cups soft bread crumbs
1/3 cup finely minced onion
1/4 cup milk
2 eggs
2 tablespoons minced parsley
1 tablespoon lemon juice
1/4 teaspoon each of salt and dill weed
Dash pepper

Drain salmon, reserving 2 tablespoons liquid; flake. Combine all ingredients. Place in well-greased
8-1/2 x 4-1/2 x 2-1/2-inch loaf pan or shape into loaf on greased baking pan. Bake at 350 degrees
F. 45 minutes.

Makes 4 to 6 servings.

Salmon Patties: Prepare salmon mixture as above. Shape into eight 1-inch thick patties. Pan-fry on
both sides in 2 tablespoons oil or butter until golden brown.
