Recipes: Smoked Salmon Roasted Garlic Dip

Baked golden brown with Echo Falls, Cold Smoked Salmon Sockeye or Scottish Salmon, served with sliced baguette or cracker
for a hot appetizer

Ingredients:

Cream cheese - 6 ounces
Echo Falls, Cold Smoked Salmon Sockeye or Scottish - 4 ounces
Onions, yellow diced fine - 2 tablespoons
Garlic, roasted, chopped (see chef notes) - 1 tablespoon
Sherry vinegar - 1 1/2 tablespoon
Rosemary, fresh, chopped fine - 2 teaspoons
Parmesan cheese, grated - ¼ cup
Lemon juice - 1 tablespoon
Salt - ¼ teaspoon
Pepper, black - ½ teaspoon

Method:

  • Preheat oven to 350F Soften cream cheese and mix in all ingredients, but ½ parmesan cheese, until incorporated and smooth.

  • Place in oil sprayed, bake able casserole dish and top with remaining cheese.

  • Bake for 45 minutes until golden.


  • Chef's Note: For roasted garlic, purchase pre-roasted. Whole bulb. Preheat oven to 450F cut the top of the garlic bulb and
    expose the additional cloves. Drizzle with small amount of olive oil, salt and pepper. Wrap with foil and bake for 50 minutes
    until each clove is soft and washed brown. For peeled garlic, follow the same procedure, but add more oil and cook for only
    40 minutes. Serve with crackers, bread or toasted baguette. Option: Add fresh herbs or olives.

    Yield: 4- 6 portions
