Recipes: Stir Fried Shrimp with Curry, Orange and Mint

Prep Time: 15 Minutes Cooking Time: 10 Minutes

Ingredients:
4 Tbls. oil
4 tsp. curry powder
2 medium onions, halved and sliced
2 garlic cloves, peeled and minced
1 ¼" thick slice peeled ginger root, minced
2 medium red sweet peppers, sliced
1 medium zucchini, split in half, sliced
½ lb. snow peas, stem and "string" removed
2 ½ cups Ocean Beauty shrimp (3/4 lb.)
2 tsp. cornstarch
½ tsp. sesame oil
1 Tbl. soy sauce
1 cup orange juice
1 ½ Tbls. chopped fresh mint leaves, or 1 tsp. dried mint leaves
6 servings cooked rice

Combine cornstarch, sesame oil, orange juice and soy sauce. If using dried mint leaves, add to the orange juice
mixture; if using fresh mint, do not add. Heat oil in a wok; add onions, curry powder; stir fry for 2 minutes. Add
garlic, ginger; cook for 1-2 minutes. Add peppers; cook for 1 minute. Add zucchini; cook for 1 minute. Add
orange juice mixture and snow peas; cook until sauce is thick and bubbling. Stir in shrimp, scallions, (and fresh
mint, if being used.) Heat shrimp through (no more than 1-2 minutes); serve over rice.
