Recipes: Shrimp & Black Bean Quesadilla

Prep Time: 10-15 Mins. Cooking Time:15 Mins.

Ingredients:
1 Tbls. canola oil
2 medium red onions, halved and sliced
1 tsp. prepared "Cajun Spices"
2 (16 oz). cans of black beans, drained and rinsed
4 Flour tortillas ("9 in.burrito size")
2 cups Ocean Beauty shrimp (2/3 lb.)
6 oz. Monterey Jack Cheese, sliced or grated
Salsa and sour cream (optional)

Preheat oven to 375° F. Heat oil over medium heat in a saute or shallow saucepan. Add sliced onions and " Cajun Spices";
saute for 5 minutes. Lay tortillas out on 1 or 2 baking sheets. Divide bean mixture between tortillas, spreading so it covers half
of the tortilla in a half-moon shape. Top beans with shrimp, dividing evenly between all tortillas. Arrange cheese over the tortilla
halves without beans and shrimp on them. Bake tortillas until cheese completely melted and shrimp heated through - do not heat
too long, or shrimp will overcook. Fold tortilla cheese side over on to bean and shrimp side. Serve with salsa and optional sour
cream.

Makes 4 Servings (or 8 as appetizer)
