Recipes:
Grilled Scottish Quesadilla
2 9-inch Flour Tortillas
4 oz. Ian McTavish or Echo Falls Smoked Scottish Salmon
2 oz. Chevre Goat Cheese
1 tsp. tiny Capers
1/4 Red Onion (sliced thinly)
Several Cilantro Sprigs
1 tsp. Olive Oil
Brush tortillas lightly with olive oil, spread Chevre on opposite side,
place oiled
side down on grill. Chop salmon and scatter along with onion and capers.
Place
second tortilla, lightly oiled, on top. Flip and grill until browned
and crispy on
both sides. Cut like a pizza and serve fresh from the grill.
