Recipes: Salmon Chorizo en Huevos

2 teaspoons Oil, vegetable
1 medium Onion, white, diced
1 medium Bell pepper, green, seeded, diced
1 pkg Salmon Chorizo Sausage, 12 oz.
8 Eggs, beaten
Salt and Pepper, to taste


Garnish (optional)
2 tablespoons Cilantro, fresh chopped
3 tablespoons Fresh tomato, diced
1 Ovacado, diced
3 tablespoons White cheese, crumbled


Heat oil in a non-stick frying pan and sear onions, peppers while breaking up chorizo in the pan.
Cook for 4 minutes stirring regularly, until sausage is completely cooked. Add egg and scramble
to desired doneness.

Yield: 4 - 8 oz. Portions
