Recipes: Salmon Chorizo Slaw

Olive oil 2 teaspoons
˝ medium Onion, red, cut in strips
1 small Bell pepper, green, seeded, cut in strips
1 small Bell pepper, red or yellow, seeded, cut in strips
1 pkg Salmon Chorizo Sausage, 12 oz.
1/4 teaspoon Oregano, leaf dried
1/4 teaspoon Salt, to taste
1/8 teaspoon Pepper, to taste
1 tablespoon Vinegar, red wine or cider
1˝ tablespoons Lime juice, fresh
2 teaspoons Sugar
2 tablespoons Cilantro, fresh chopped
4 cups Cabbage, green, finely shredded

Garnish (optional)
2 tablespoons Cilantro, fresh chopped
3 tablespoons White cheese, crumbled
1 Lime, fresh wedges


Heat olive oil in a sauté pan and sear onions, peppers while breaking up chorizo in the pan.
Cook for 5 minutes stirring regularly, until sausage is completely cooked and remove from heat.
In a small mixing bowl blend lime juice, vinegar, sugar, oregano, cilantro, salt and pepper.

Toss cabbage with mixture and salmon. Add choice of garnishes. Serve as salad or with tortillas
and beans.

Chef's Note: Add fresh avocado and crispy tortilla strips to the top.

Yield 4 - 6 oz. portions
