Recipes:
Alaska Salmon Waldorf Salad
1/2 cup light mayonnaise or salad dressing
1/4 cup plain nonfat yogurt
1/4 teaspoon lemon-pepper seasoning
1/2 teaspoon dried thyme
1/4 teaspoon salt
1 can (14-3/4 oz.) or 2 cans (7-1/2 oz. each) Alaska salmon, drained and
chunked
2 ribs celery, diced (about 1 cup)
1 large apple, chopped (about 1 cup)
1/2 cup (2 oz.) broken walnuts
In small bowl, blend mayonnaise, yogurt, lemon-pepper, thyme and salt.
In separate bowl, combine salmon, celery, apples and walnuts. Stir dressing
into salad.
Makes 5 cups, about 3 to 4 servings.
