Roasted Vegetable Smoked Salmon Panini
Echo Falls, Hot Smoked Peppered Salmon, Cajun, Traditional or King salmon makes a fantastic creative sandwich.
Ingredients:
Bread, Italian thin focaccia or ciabatta - 4 pieces
Olive oil - 1 tablespoon Echo Falls, Hot Smoked Peppered Salmon - 8 ounces
Vegetables roasted, sliced (see chef notes) - 4 ounces Cheese, provolone
- 2 ounces Basil, fresh leaves - 1 ounce/ 10 leaves Pesto, prepared -
2 tablespoons Mayonnaise - 2 tablespoons
Method:
Slice bread in 2 halves and brush with olive oil. Grill
or heat in oven.
Mix mayonnaise with pesto and spread over each side. Layer with cheese,
sliced roasted vegetables, basil leaves and flaked smoked salmon.
Chef's Note: For roasted vegetables; purchase pre-roasted and
sliced or cut zucchini, mushrooms, red bell pepper
sliced thin and toss with light amount of olive oil, salt and pepper.
Char grill, or oven broil until tender and brown, yet still firm. Serve
at room temperature.
Substitute: Artichoke canned, pimento or even mushrooms for roasted vegetable.
Pesto can be replaced by adding
mayonnaise with
fresh garlic, dried basil with a little lemon juice. Substitute any heavy
flavorful bread. Wrap prepared
sandwich in foil and heat in the oven.
Serve with soup or salad.
