Recipes: Smoked Salmon Fettucini

Sauté chopped garlic and shallots in butter. Add white wine, cream and Echo Falls, Cold Smoked, Sockeye or Scottish
Salmon. Simmer with Salt pepper and then fresh cooked fettuccine pasta.

Ingredients:

Pasta, fettuccine, dry - 8 ounces
Butter - 4 tablespoons
Onion, yellow, sliced lengthwise - 2 cups
Garlic, chopped - 1 ounce
Mushrooms, white, sliced - 2 ounces
Echo Falls, Cold Smoked Salmon Sockeye or Scottish - 8 ounces
Salt - ˝ t + pinch
Pepper, black - 1 teaspoon
White wine - ˝ cup
Cream, whipping - 2 cups
Cheese parmesan, grated - ˝ cup

Method:

  • Boil water with pinch of salt. Add dried pasta, separate noodles and cook until tender stirring regularly.
  • Heat butter in skillet and sauté onions until transparent.
  • Add garlic, mushrooms, salt and pepper.
  • Add white wine, cream and smoked salmon.
  • Reduce sauce by ˝ stirring regularly.
  • Add heated pasta and fold in cheese, stir well and serve.


  • Chef's Note: Add fresh chopped basil and serve with fresh vegetables.

    Yield: 4 portions
