| Recipes: Smoked Salmon Roasted Garlic Dip Baked golden brown with Echo Falls, Cold Smoked Salmon
Sockeye or Scottish Salmon, served with sliced baguette or cracker Chef's Note: For roasted garlic, purchase pre-roasted. Whole bulb. Preheat oven to 450F cut the top of the garlic bulb and expose the additional cloves. Drizzle with small amount of olive oil, salt and pepper. Wrap with foil and bake for 50 minutes until each clove is soft and washed brown. For peeled garlic, follow the same procedure, but add more oil and cook for only 40 minutes. Serve with crackers, bread or toasted baguette. Option: Add fresh herbs or olives. Yield: 4- 6 portions |
