Recipes: Smoked Salmon Chicken Torta

Delicious chicken entrée that features Echo Falls, Hot Smoked Traditional or King Salmon.

Ingredients:

Chicken Breast, boneless - 1 ounce
Oil Olive - 2 tablespoons
Salt - ¼ teaspoon
Pepper - ¼ teaspoon
Ham, deli sliced - 4 ounces
Cheese, fontina, slices - 2
ounces Echo Falls Hot Smoked Traditional or King Salmon - 4 ounces
Avocado - ½ each
Tomato Marinara, prepared - 4 ounces

Method:

  • Cut raw trimmed breast in cutlet ½ to ¾" and pound if necessary. Season with salt and pepper.

  • Heat olive oil in flat bottom pan and pan fry chicken on one side on medium high heat.

  • Turn over, reduce heat to medium and top ham, cheese and crumbled smoked salmon.

  • Cover for 3 minutes or place in a preheated oven.

  • Served over heated tomato marinara sauce.


  • Chef's Note: Served over fresh cooked, seasoned, pasta or rice. Fresh vegetables and grated parmesan cheese.
    Substitute any cheese.

    Yield: 4 portions
