Shrimp Caesar Salad with Croutons
Prep time: 20 minutes
Ingredients:
1 head Romaine lettuce
1 ½ cup Ocean Beauty shrimp (approx.1/2 lb.)
½ cup grated Parmesan cheese
Cracked black pepper
Croutons:
5 slices crusty French bread, cut into 1" square pieces
Olive oil
Dressing Ingredients: (or substitute prepared dressing)
3 peeled garlic cloves
3 Tbls. lemon juice
1 ½ tsp. Worcestershire sauce
¾ cup olive oil
Salt and pepper
6 anchovies (optional)
Preheat oven to 400° F. Put bread squares into baking
pan, drizzle with olive oil, toss lightly to
coat. Bake, stirring often, until crisp and evenly browned. To make
dressing: combine all dressing
ingredients, except anchovies, in food processor until ingredients are
finely chopped and well mixed.
Optional: Add and pulse anchovies until chopped. Season with salt and
pepper. Combine shrimp with ¼
cup dressing; set aside. Toss washed, dried lettuce with remaining dressing,
or to taste. Add croutons
and grated cheese; toss lightly. Divide salad onto six plates or bowls;
top each with shrimp.
If desired, sprinkle with pepper and more grated cheese.
Makes 6 Servings
